Chicken Cordon Bleu is a French Classic that is pretty easy to master and will impress your family and friends. Admittedly, this is a dish that hasn’t been on my radar for quite a while, so it was something new for my family. Last week at culinary school our team moved to the “Entree” station for our 2 week rotation. Needless to say, you couldn’t wipe the smile off my face for the entire 6 hour class. It’s the main attraction, the big event and so much fun! Each day, we switch cuisines, also on a 2 week rotation, so that everyone gets to work in every station for each cuisine. The other day for French day, we made this Chicken Cordon Bleu.
Chicken Marsala is another classic that is so easy to make but tastes and looks beautiful on the plate. Definitely do-able for a weeknight family style dinner or fancy enough for a weekend dinner party. Pounding the chicken thin keeps in tender and cooking time is quick.
There’s a few reasons why I call this A Little Bit of Chicken Fried….First off, we are big country music fans and we love the Zac Brown Band. Every time I hear this song, it makes me smile and think of summertime, hanging out by the pool and relaxing with family and friends. The second reason is that there are so many “secrets” to fantastic fried chicken and my recipe is really a little bit of lots of those tips and techniques. It’s a little bit of Ina Garten, a little bit of Tyler Florence and a little bit of Paula Deen…they each have inspired different ingredients or techniques in my recipe.
Coq au Vin is a classic French dish of braising chicken with wine, mushrooms, garlic and bacon. You can use bacon or pancetta, it’s a win-win either way, right? Julia Child helped make this dish increasingly popular in the United States, it was often thought of as one of her signature dishes. Red wine, specifically Red Burgundy is typically used, although you could always try it with a different varietal if you want.
Chicken Parmesan is the ultimate classic comfort food and everyone has their own version…this is mine. Now to the inspiration for my Chicken Parm. I am not necessarily a huge fan of NFL football, however, during the season, it’s usually on at our house. To me, this is also known as “background noise”…sorry, but it’s true. Last year, after hearing months of Peyton Manning hum “Chicken Parm, you taste so good” during the Nationwide Insurance commercials, I was moved on more than one occasion to whip up a batch for the family.
