I love it when we go out to a restaurant and find a dish that we absolutely love! One of my favorite challenges is to try to figure out what is in it and replicate it at home. This in the inspiration behind this recipe for Chicken Pesto Gorgonzola.

Hands down, Cornish Game Hens & Wild Rice Stuffing is one of my favorite fall meals! This recipe is pretty easy but makes for a beautiful presentation and it’s a break from the norm. I usually cut them in half to serve, no one can usually get through a whole one on their own. Adding the dried cranberries and apricots enhances the wild rice with a little pop of fall colors. And the slivered almonds adds a crunch with every bite. Impress your family and friends with this delicious dish!
It’s time to re-think Brussels Sprouts. If you haven’t eaten Brussels Sprouts since you were a kid after some sort of horrible experience eating them boiled, steamed, flavorless…shall I go on? You get the picture. I am here to tell you that Bacon Brussels Sprouts will totally turn you around. These have flavor, crispy bits of crunchy leaves and most importantly bacon, enough said.
Sometimes quick and easy meals are still elegant in presentation, this Weeknight Shrimp Marinara is a perfect example. It is a great weeknight meal that is light and healthy with a few secret ingredients. You can also call this a “Fra Diavlo” or spicy red sauce. I don’t make it too spicy because although I love a little heat, I don’t love to the point that the kids complain….it’s a fine line, you know what I mean? I put my own spin on this pasta dish by adding in fresh spinach that I had on hand…great way to sneak it in before the kids even knew it!
